Christmas Dinner @ home 2005-12-25 Seafood

聖節不想同人迫,決定在家海鮮。到街市發覺有好食。以下是原材料:

象拔螃仔
游水方
杉龍
本地龍
大花甲
成品

清蒸太糊大閘蟹
清蒸花甲。
魚檔亞叔話清蒸最鮮甜,不用加味。事實亦如此, 清蒸已夠味,好濃海水味。

白灼海中蝦
因蝦不夠大隻所以不開邊蒸。

金銀蒜篜象拔螃仔

清蒸游水方
鮮甜,夠魚味,正!
白灼本地龍仔
勁鮮甜,有海水味。
上湯龍蝦伊面底
開邊龍及杉龍仔。是當日最惹味的。結論是龍好食過杉龍。

巳經成熟,帶有豐富black currant及cedar香味,中等至full body,回味長,乾淨,幾好。****

This is unquestionably a profound Grand-Puy-Lacoste, but it is excruciatingly backward. It reveals an essence of creme de cassis character which sets it apart from other Pauillacs. The wine is displaying plenty of tannin, huge body, and sweet black currant fruit intermixed with minerals and subtle oak. Massive, extremely structured, and with 25-30 or more years of longevity, this immensely-styled Grand-Puy-Lacoste will require 7-8 years of patience, perhaps longer. A superb, classic Pauillac. Anticipated maturity: 2007-2030.

Consistently one of the most profound wines of Barsac/Sauternes, this wine, made from 100% Semillon, is one of the most ravishing examples of just how much elegance can be built into a powerful race horse style of wine. The classic 1997 Climens boasts gorgeously pure pineapple, citrus, butter, mineral, and floral scents in its soaring aromatics. While it is not a blockbuster, it is medium to full-bodied, with extraordinary precision, elegance, and purity. This slightly sweet Climens should drink well young, but evolve nicely for 15-30 years. It is unquestionably a high-class Barsac. Anticipated maturity: 2003-2025.

香港入口貨,當年購入價HKD10xx?香味一流,有class,而入口較單薄。放久了酸度變高,失了平感。***

香港入口貨,當年購入價少於HKD2000。香味一流,比那瓶NSG高了一班,很elegant,很blue blood的感覺。因年份關係,入口略薄但平。個人就很喜歡這種風格。****

香港入口貨,當年購入價少於HKD3000。極度罕有貨。屬P君珍藏。好肉地(Meaty),Nose很深,很有內涵。入口好full,但不粗糙,有class但不像Leroy VR那種陰柔。****

Candied blackberries and cherries are found in the nose of the awesome 2000 Mazis-Chambertin. A thick, yet juicy wine, it coats the taster’s palate with jammy black cherries. Medium to full-bodied, it is bold, dense, deep, expansive, and hugely concentrated. Its considerable tannin, discernable in its prodigious finish, is perfectly ripe, almost sweet. Drink this awesome effort between 2007 and 2020. Bravo!

No offense to Peter Weygandt, this estate’s importer, but can anyone think of an easier job than having to sell Bernard Dugat’s wines? For the past decade, this 7.5 hectare (18.53 acre) domaine has consistently produced exceptional wines, a testimony to the relentless pursuit of quality exhibited by Dugat, his wife, and children. “Yes, it’s true that we live in the vineyards, working from morning to night, but the primary reasons we don’t have the same problems as many others in Burgundy is that we concentrate on having low yields and are fortunate enough to have old vines,” sais Bernard Dugat.

Anticipated maturity: 2008-2016.

轉戰澳洲,此瓶酒購自澳洲,屬馬Sir珍藏。開首酒香不顯,但酒身豐滿。一小時之後,澳洲應有Shiraz靚版香味湧出,有Minty及苺味。***

An outstanding Montrose, the 1989 is one of the vintage's stars. It possesses an opaque dark ruby/purple color, a sweet nose of minerals, black fruits, cedar, and wood, dense, medium to full-bodied, highly extracted flavors, low acidity, and moderate tannin in the long finish. While it appears to be closing down far more quickly than the legendary 1990, it has layers of sweet fruit as well as an elevated level of glycerin. Give it 5-7 years of cellaring, and drink it over the subsequent 2-3 decades. Last tasted 3/97

香港入口貨,當年購入價少於HKD3000。但近月炒風利害,凡100分滿分酒酒價飛升,現價可能要6k以上。開首香味不顯但很乾淨,無皮味。顏色超深,很dense很concentrate。透氣兩個小時後,Nose開始出現,含蓄得來有內涵,像有很多東西似的。入口很full而且滑正,length幾長,但未見很complex。老闆R君說要四個鐘之後有好東西出來,可惜人多等不來。****

In several tastings last year, the 1990 Montrose clearly revealed its incredible complexity and massive character. I was especially pleased when, at a large lecture I gave in London at the end of March, the 1990 Montrose, in very tough company (Cheval Blanc 1989 and 1990, Pichon-Lalande 1989 and 1990, Certan de May 1989 and 1990), proved the over-whelming choice of a crowd of nearly 400 British tasters. The wine is remarkably rich, with a distinctive nose of sweet, jammy fruit, liquefied minerals, new saddle leather, and grilled steak. In the mouth, the enormous concentration, extract, high glycerin, and sweet tannin slide across the palate with considerable ease. It is a huge, corpulent, awesomely-endowed wine that is still relatively approachable, as it has not yet begun to shut down and lose its baby fat. It thoroughly embarrassed the 1989, itself an exceptional wine. The 1990 needs 10 more years of cellaring; it should last for 25-30, possibly 40-50 years.
